Nasi Ayam - Mama's Recipe

It's time for another recipe (while i'm still rajin to update my blog) hehehe
NASI AYAM MAMA STYLE
Ingredients
Needed for This Recipe
Whole Chicken
Ginger
Garlic
Onion
Soy Sauce
Blackpepper Sauce
Oyster Sauce
Cooking Vinegar
Salt
Sugar
Seasoning
Daun Sup (Parsley Malay?)
Scallion / Leek
Cinnamon Stick
Star Anise
Salad
Tomato
Cucumber
Red Chili
Rice
A: Ingredients
Needed (Chicken Stock):
1)
Boil the chicken with
1 litre of water
2)
Put 2 inch of Ginger
3)
Pinch of Salt
B: Ingredients
Needed (Rice):
1)
Wash the rice and rinse
2)
Put Chicken stock water
3)
Pinch of salt
4)
Garlic (Slice)
5)
2 inch Ginger
C: Ingredients Needed (Chicken Marinated):
1) Soy Sauce
2) Oyster Sauce
3) Vinegar
4) Garlic (Mashed)
5) Ginger (Mashed)
6) Seasoning
D: Ingredients
Needed (Chili Sauce):
1) Large Red Chili
2) Water
3) Sugar & Salt
4) Vinegar
E: Ingredients Needed (Soy Sauce):
1) Garlic
2) Sugar / Salt
3) Leek
4) Bawang Goreng (Fried Shallot)
#Method A:
1) Boil Chicken with extra water until the chicken sank
2) Put Ginger & Garlic
3) Boil Until the chicken is quite soft & pre-cooked
*This is method to make fresh chicken stocks for this recipe
#Method B:
(Chicken Rice)
1) Clean the rice
2) Put the chicken stock (from method A)
3) Put Garlic Sliced & Ginger (Mashed)
4) Seasons with Salt & Knorr Chicken Stok (if you like)
5) Cook the rice in a rice cooker as usual
#Method C:
(Chicken Marinate)
1) Tossed Chicken from chicken stocks water
2) Placed in a bowl
3) Put oyster sauce , black pepper , soy sauce, Mixed well
4) Coating the chicken
5) Add some vinegar & seasoning
6) Marinade for 15 minutes (minimum). The longer the better
#Method D:
(Chicken Soup)
1) Prepare pot and put chicken stocks water and boil it.
2) Blend the Onion + Garlic + Ginger (I'm using 3 onion, 3 garlic & 1cm ginger)
3) In another place prepare the pan with oil. Heat the oil and stir fry the blended item. Put cinnamon stick and star anise.
4) Put the fry item into the pot
5) Stir the pot and mixed it well. Seasons with salt & Knorr chicken stocks (cube).
6) Put some Daun Sup & Bawang Goreng into the soup
#Method E:
1) Fry the chicken
2) Do not fry too long because the chicken already well marinated & half cooked as per (method A)
3) Avoid from overcooked because the chicken will get too hard when it is no longer hot
#Method F:
(Chili Sauce)
1) Chop / Blend Red Large Chili with Garlic (I'm using 5 chili + 3 Garlic)
2) Heat the pan and put the blended item + 1/2 cup water + 1/2 spoon vinegar + sugar &salt
3) If you want the sauce thick you can put some corn starch
(Soy Sauce)
1) Take all Chicken Marinate Sauce from Method C
2) Heat & put in small pot
3) Cooked with Minced/Smashed Garlic & seasons with sugar/salt
4) If you like it spicy can put some chili.
5) Serve with sprinkle of daun bawang & bawang goreng
Last Part:
Ready to serve!
You can serve it also with any vegetables that you like.
Example: Cucumber, Salad, Bean Sprouts, Tomato
